Place the carrot noodles in a medium-sized skillet or a wok along with 2 Tbsp of oil and ¼ tsp salt. Heat on medium until desired tenderness (10 – 15 minutes if using frozen noodles). Stir every 3 – 5 minutes. When the noodles are cooked, keep on low heat until the turkey is done.
While the carrot noodles are cooking, put the ground turkey, 2 Tbsp oil, basil, oregano, Italian seasoning, ½ tsp salt, cayenne pepper, and black pepper in a second medium-sized skillet. Heat on medium. Using a spatula, mix the spices in and chop the meat into small pieces.
Cook turkey on medium heat for 7 minutes. Using a spatula, chop the meat into small pieces, and stir.
Add tomato paste to the turkey, and then stir. Cook for an additional 2 – 3 minutes.
Add water to skillet with the turkey. Cook for an additional 1 – 4 minutes until the meat is cooked through.
Carrot noodles can be made at home with a spiralizer or purchased at the store in the produce section or the freezer aisle.
Garnish with fresh basil.
Serve with a side salad.
