- 2 boneless skinless chicken breasts approximately 1 lb
- 1 Tbsp extra virgin olive oil
- 1 tsp dried basil
- 1 tsp dried thyme
- 1/4 tsp ground black pepper
- 1/8 tsp Himalayan salt

Instructions
- Cut the chicken into small bite-sized pieces.
- Heat a large skillet on medium-high.
- Coat the skillet with the olive oil, and add the chicken to the skillet. Add the basil, thyme, pepper, and salt. Stir well to season the chicken evenly.
- Cook for 3-5 minutes until the chicken looks mostly white from the top.
- Flip the chicken pieces over. Continue cooking for an additional 3-5 minutes.
- When the juices start drying up and the chicken is browning on the top, flip the pieces over again. Cook for an additional 1-2 minutes to brown the other side.
- Check that the chicken pieces are cooked all of the way through. There should be no pink.

Notes:
If the skillet is too crowded, it’s difficult to cook all of the pieces evenly, and they will have a less intense flavor. To save time on meal prep, cook enough chicken for a few meals/dishes at the same time.
Serving Suggestions:
- Add to a salad for protein.
- Serve with pasta or zucchini noodles.
- Use as a pizza topping.
