Instructions
  1. Cut the eggplant into 1 inch cubes. Place them in a large sauté pan with high sides.
  2. Add 2 Tbsp oil, salt, and turmeric to the pan. Stir.
  3. Heat over medium heat for 5 minutes.
  4. Sprinkle the garam masala over the eggplant. Add the remaining oil. Stir.
  5. Cook for 5 more minutes.
