Ingredients

Instructions
In a small bowl, mix together the cilantro, salt, cumin, black pepper, and chili powder. Set aside.
Cut the chicken into 6 – 8 pieces. Put the chicken, oil, ½ tsp of the spice mix, and 2 tsp lime juice in a sauté pan with high sides.
Cook on medium heat for 15 minutes. Turn the chicken over after 10 minutes.
Meanwhile, cut the zucchini in quarters lengthwise and then into ½ inch thick pieces. Also, coarsely chop the spinach.
Add the zucchini, spinach, and remainder of the lime juice and spice mix to the pan. Cook for 10 minutes.
Turn the heat to medium high. Cook for an additional 5 – 10 minutes until the chicken is tender and white all of the way through.
