- 1 1/2 lbs. small potatoes
- 1/4 cup extra virgin olive oil
- 1 tsp ajwan
- 3/8 tsp Himalayan salt
- 1/4 tsp garam masala

Instructions
- Cut the potatoes into bite sized pieces.
- Put the potatoes in a sauté pan with high sides. Drizzle 2 Tbsp oil over the potatoes. Sprinkle the ajwan, salt, and garam masala over the potatoes. Stir.
- Cook on medium heat for 10 minutes until the potatoes starts to brown and crisp.
- Drizzle the remaining 2 Tbsp oil over the potatoes. Flip the pieces over.
- Cook for an additional 10 minutes.
- Flip the pieces over.
- Cook for an additional 10 minutes if more sides need to be crisped.

- Serve with a pureed veggie soup, like carrot parsnip soup.
- Serve with black eyed peas.
- Dip in tamarind chutney.
- Dip in mint chutney.
