  1. Use a spiralizer to cut the zucchini into noodles. Put them in a sauté pan with tall sides.
  2. Peel and grate the carrot. Add the grated carrot to the pan.
  3. Peel and finely dice the fresh ginger. Add it to the pan.
  4. Add the oil, soy sauce, ground ginger, and salt to the wok. Stir to mix in the seasonings.
  5. Add the shrimp to the pan. Heat over medium heat.
  6. Cook for 5 – 7 minutes, stirring occasionally. Flip the shrimp over after 3 minutes. The dish is done when the shrimp are pink and cooked through.
