Cook the quinoa
  1. Rinse the quinoa.
  2. In a small pot, add the quinoa, water, oil, and salt. Bring to a boil over high heat.
  3. Turn down to low heat, and cover with a lid. Cook for 15 minutes. The water should be completely absorbed when the quinoa is cooked.
  4. Let the quinoa cool.
Assemble the salad
  1. Place the lettuce in the serving bowl.
  2. Add ½ cup of cooked quinoa on top.
  3. Cut the tomatoes into halves. Add them to the salad bowl.
  4. Dice the bell pepper. Add it to the bowl.
  5. Dice the cheese. Sprinkle it on top.

Notes:

The salad will keep in the fridge for 2 days.  Extra quinoa will keep in the refrigerator for several days.
