  1. Slice the carrots into very thin rounds.
  2. Put the carrots and ½ cup water into a ½ pint jar or other microwave safe container (with a lid for later). Microwave on high for 2 – 3 minutes. Let sit in the microwave for 5 minutes for the carrots to soften.
  3. If some of the water boiled out, that’s ok. Just add up to a ¼ cup of water.
  4. Add the maple syrup, oats, cinnamon, and salt to the carrots.
  5. Stir well to mix in the cinnamon and completely moisten the oats.
  6. Press the oats down in the jar.
  7. Refrigerator overnight.

Notes:

  1. To make more than one serving at a time, place up to four jars in the microwave at once and increase the cook time to 4 – 7 minutes.
