Parsnip Cranberry Overnight Oats

Instructions
  1. Grate the parsnips.
  2. Add the parsnips and oil to a small sauté pan. Cook on medium heat for 5 minutes. Stir occasionally.
  3. In a medium mixing bowl, combine the oats, cranberries, brown sugar, vanilla, cardamom, cinnamon, and salt. Stir until well mixed.
  4. Add the parsnips and water.
  5. Stir until the oats are completely moistened.
  6. Press the mixture into a shallow 6×6 container for bars or into single serving jars.
  7. Refrigerator overnight.

Notes:

Vanilla extract can be substituted for the vanilla powder.  Stir the vanilla extract into the water before adding it to the oat mixture.
