Radish Cheese and Greens Side Salad

Ingredients
- 1 cup butter lettuce
- 2 radishes
- 1/4 cup Edam cheese
- 1/2 tsp extra virgin olive oil
- Dash Himalayan salt
Instructions
- Tear the lettuce into bit size pieces, and place them in the bottom of the salad bowl.
- Finely dice the radishes. Add them on top of the lettuce.
- Finely dice or grate the cheese. Add it on top of the radishes.
- Dress the salad by drizzling the olive oil over the top along with a dash of salt.

Notes:
The salad (minus the olive oil and salt) will keep well in the refrigerator for up to 3 days. Just add the oil and salt when you’re ready to eat the salad or in the morning if it’s being packed to go.
