  1. Peel the turnip and ginger. Run the turnip and ginger through a food processor to make a chunky puree.
  2. Place the turnip puree, oil, salt, turmeric, garam masala, and cumin in a medium-sized pot. Cook on medium low for 25 minutes. Stir every 5 minutes.
  3. Stir tomato paste and water into the turnip mixture. Cook with a lid on the pot for 10 minutes, stirring after 5 minutes.
  4. Add the baking soda, and stir.

Recipe Notes

Notes:  

Masala is traditionally made with onions.  The baking soda is optional. It helps to reduce the acidity of dishes made with masala.  Extra masala can be stored in the freezer.
