In a small sauce pan, heat the pomegranate juice on medium high for 3 minutes.
Turn the heat down to medium low, keep at a low simmer. Stir occasionally.
When the syrup is condensed to about ¾ cup (about 40 minutes), add in the sugar. Stir until it dissolves.
- Serve with pumpkin waffles.
- Drizzle over vanilla ice cream.
