Cut the cores out of the apples. Chop the apples into 1-inch pieces, and place in the cooking pot.
Add the ghee, vanilla powder, cinnamon, cardamom, and salt. Stir until the apples are evenly coated.
Add the water to the cooking pot.
Put the lid of the cooking pot. Cook on high for 3 hours.
Transfer the apple mixture to a blender. Blend until smooth. CAUTION when blending hot foods. Keep the hole in the blender lid slightly open to prevent a vacuum seal.
Transfer the blended apples back to the cooking pot.
Put the lid on the cooking pot at a slight angle to allow moisture to escape. Cook on low for 6 hours. Stir every 2 hours.
This recipe was developed using a Crock Pot 6-quart slow cooker with stove-top browning. An equal amount of pure vanilla extract can be substituted for vanilla powder. If you’re using vanilla extract, add it to the wet ingredients.
