Remove the core from the apples. Cut the apples into ¼ inch cubes.
Spray an 8x8 glass baking dish with non-stick spray. Place the apple in an even layer in the dish. Sprinkle with cinnamon.
In a small mixing bowl, combine the oats, quinoa flakes, and salt. Add the oil and maple syrup. Stir until evenly moistened.
Spread the oat topping evenly over the apples.
Increase the oven temperature to 375°F. Bake for an additional 10 minutes.
- Serve with a scoop of vanilla ice cream (non-dairy or lactose free if needed).
