Ingredients
- 3 baby carrots
- 1/2 + 1/4 cup water
- 1 Tbsp maple syrup
- 1/2 cup quick cook oats
- 1/8 tsp ground cinnamon
- Dash Himalayan salt

Instructions
- Slice the carrots into very thin rounds.
- Put the carrots and ½ cup water into a ½ pint jar or other microwave safe container (with a lid for later). Microwave on high for 2 – 3 minutes. Let sit in the microwave for 5 minutes for the carrots to soften.
- If some of the water boiled out, that’s ok. Just add up to a ¼ cup of water.
- Add the maple syrup, oats, cinnamon, and salt to the carrots.
- Stir well to mix in the cinnamon and completely moisten the oats.
- Press the oats down in the jar.
- Refrigerator overnight.

- To make more than one serving at a time, place up to four jars in the microwave at once and increase the cook time to 4 – 7 minutes.
