Ingredients
- 1/4 English cucumber
- 1 vine ripened tomato
- 2 Tbsp fresh basil leaves
- 1/2 cup cottage cheese lactose free if need

Instructions
- Peel the cucumber.
- Dice the cucumber. Set aside.
- Dice the tomato. Set aside.
- Finely chop the basil.
- Place 1/3 of the diced cucumber in the serving dish. Sprinkle 1/3 of the basil on top. Layer 1/3 of the diced tomato in the dish. Spread ¼ cup cottage cheese on top. Repeat until out of ingredients.
Recipe Notes
Serving Suggestions:
- Drizzle with balsamic vinegar.
- Garnish with whole basil leaves.
