Ingredients
- 2 cups quick cook oats gluten free if needed
- 5 - 6 cubes candied ginger ~3 Tbsp when diced
- 1/4 cup dried cranberries
- 2 Tbsp maple sugar
- 1/4 tsp ground cinnamon
- 1/4 tsp vanilla powder
- 1/8 tsp Himalayan salt
- 1 1/4 cup water
- non-stick spray

Instructions
- Using a food processor, grind the quick cook oats into a flour. (A coffee grinder works well too.) Transfer the oats to a medium mixing bowl.
- Dice the ginger. Add it to the bowl.
- Add the cranberries, sugar, cinnamon, vanilla powder, and salt to the bowl. Stir.
- Add the water to the oats and stir until the oats are all moistened.
- Spray a 6x6 container with non-stick spray.
- Transfer the oat mixture into the dish. Press it into an even layer.
- Cover and refrigerate overnight.
- Cut into bars.
Recipe Notes
Notes:
The bars will be sticky.
An equal amount of pure vanilla extract can be substituted for vanilla powder. If you’re using vanilla extract, add it to the wet ingredients.
Serving Suggestions:
- Press ¼ cup of walnuts or pecans into the top.
- Press 2 Tbsp of chocolate chips into the top.
