Add the oats and water to the blender. Let sit for 5 minutes.
Meanwhile, coarsely chop the rhubarb.
Add the rhubarb, strawberries, yogurt, maple syrup, vanilla, and cinnamon to the blender.
Enjoy immediately while it’s cold.
Vanilla extract can be substituted for vanilla powder.
