Ingredients
- 2 Tbsp quick cook oats (gluten free if needed)
- 1/4 cup water
- 1 long stalk rhubarb (approximately 1/2 cup chopped)
- 1 1/2 cups frozen strawberries
- 1/2 cup yogurt (dairy free and/or lactose free if needed)
- 1 tsp maple syrup
- 1/4 tsp vanilla powder
- 1/8 tsp ground cinnamon

Instructions
- Add the oats and water to the blender. Let sit for 5 minutes.
- Meanwhile, coarsely chop the rhubarb.
- Add the rhubarb, strawberries, yogurt, maple syrup, vanilla, and cinnamon to the blender.
- Blend until smooth.
- Enjoy immediately while it’s cold.
