Ingredients
- 1 zucchini
- 1 carrot large
- 1 tsp fresh ginger
- 2 Tbsp extra virgin olive oil
- 1 Tbsp soy sauce (gluten free tamari sauce if needed)
- 1/2 tsp ground ginger
- 1/4 tsp Celtic sea salt
- 12 large shrimp (peeled and deveined)

Instructions
- Use a spiralizer to cut the zucchini into noodles. Put them in a sauté pan with tall sides.
- Peel and grate the carrot. Add the grated carrot to the pan.
- Peel and finely dice the fresh ginger. Add it to the pan.
- Add the oil, soy sauce, ground ginger, and salt to the wok. Stir to mix in the seasonings.
- Add the shrimp to the pan. Heat over medium heat.
- Cook for 5 – 7 minutes, stirring occasionally. Flip the shrimp over after 3 minutes. The dish is done when the shrimp are pink and cooked through.
