Ingredients
- 4 eggs large
- 1 1/2 cups butternut squash puree
- 1/2 cup old fashioned oats
- 1/8 tsp Himalayan salt
- non-stick spray

Instructions
- Blend all ingredients.
- Heat griddle on medium heat.
- Spoonfuls ~ 2 Tbsp per pancake. Cook 1-2 minutes. Flip when the bubbles are starting to pop. Cook 1 -2 minutes.
- Continue until all of the batter is cooked.
Recipe Notes
Serving Suggestions:
- Drizzle with maple syrup.
- Top with honey butter.
- Serve with brie or goat cheese topped with finely diced dried cranberries.
- Served with herb goat cheese.
