Instructions
  1. Wash the rice until the water runs clear.
  2. In a medium pot (with lid), soak the rice in the 2 cups of water for 30 minutes.
  3. Heat the pot on high to bring to a boil.
  4. Use a mortar and pestle to bruise the cumin seeds. Add the oil and spices to the rice.
  5. When the rice is at a boil, put the lid on the pot and turn the heat to low.
  6. Cook for 13 – 15 minutes. The water should be completely absorbed.
  7. Remove the pot from heat. “Fluff” or stir the rice with a fork. Put the lid back on, and let the rice sit for 5 minutes.

Serving Suggestions:

  1. Serve with saag paneer (ETP recipe).
  2. Serve with dal (lentils).
