Ingredients
- 1 tsp dried cilantro
- 1/4 tsp Himalayan salt
- 1/4 tsp ground cumin
- 1/8 tsp ground black pepper
- 1/16 tsp chili powder
- 1 boneless skinless chicken breast
- 1 Tbsp extra virgin olive oil
- 5 tsp fresh lime juice
- 1 large zucchini
- 1 cup fresh spinach

Instructions
- In a small bowl, mix together the cilantro, salt, cumin, black pepper, and chili powder. Set aside.
- Cut the chicken into 6 – 8 pieces. Put the chicken, oil, ½ tsp of the spice mix, and 2 tsp lime juice in a sauté pan with high sides.
- Cook on medium heat for 15 minutes. Turn the chicken over after 10 minutes.
- Meanwhile, cut the zucchini in quarters lengthwise and then into ½ inch thick pieces. Also, coarsely chop the spinach.
- Add the zucchini, spinach, and remainder of the lime juice and spice mix to the pan. Cook for 10 minutes.
- Turn the heat to medium high. Cook for an additional 5 – 10 minutes until the chicken is tender and white all of the way through.
