Ingredients
- 1 large sweet potato
- 1/2 cup water
- 2 Tbsp extra virgin olive oil
- 1/2 tsp Celtic sea salt
- 1/2 tsp ground cumin
- 1/8 tsp nutmeg
- Dash ground cloves
- Dash cayenne pepper season to taste
- 2 boneless skinless chicken breasts
- 1 cup frozen spinach

Instructions
- Peel the sweet potato. Chop it into ½ inch cubes. Put the cubes in a large skillet with high sides.
- Add the water, 1 Tbsp oil, and salt to the skillet.
- Put a lid on the skillet, and heat on medium heat for 10 minutes.
- Meanwhile, in a small bowl mix together the cumin, nutmeg, cloves, and cayenne pepper. Set aside.
- Slice the chicken into ½ inch thick strips.
- Add the chicken and spinach to the skillet.
- Sprinkle the spice mix over the top. Stir to mix the spices in.
- Put the lid back on, and cook for an additional 5 minutes.
- Add 1 Tbsp oil, and stir.
- With the lid off, continue cooking for 10 minutes or until the chicken is done. It will be white all of the way through and most of the liquid in the skillet will be gone.
