Ingredients
- 1 cup white rice
- 2 cups water
- 1/2 tsp extra virgin olive oil
- 1/4 tsp Celtic sea salt

Instructions
- Wash the rice until the water runs clear.
- In a medium pot (with lid), combine the water, rice, oil, and salt.
- Heat the pot on high to bring to a boil.
- When the rice is at a boil, put the lid on the pot and turn the heat to low.
- Cook for 15 minutes. The water should be completely absorbed.
- Remove the pot from heat. “Fluff” or stir the rice with a fork. Put the lid back on, and let the rice sit for 5 minutes.

- Serve with saag paneer (ETP recipe).
- Serve with dal (lentils).
