Ingredients
- 2/3 cup quinoa uncooked
- 1 1/3 cup water
- 2 Tbsp extra virgin olive oil
- 1/2 tsp Celtic sea salt
- 3.5 oz. oyster mushrooms
- 1/4 cup green onions dark green ends only

Instructions
- Rinse the quinoa.
- In a medium pot, add the quinoa, water, 1 tsp oil, and salt. Bring to a boil over high heat.
- Turn down to low heat, and cover with a lid. Cook for 15 minutes. The water should be completely absorbed when the quinoa is cooked.
- Meanwhile, cut the green onions to have only the dark green ends. The light green and white portions can be discarded for this recipe. Finely dice the dark green portion. Set aside.
- Coarsely chop the oyster mushrooms, discarding the firm stocks.
- Once the quinoa is cooked, heat a sauté pan over medium heat.
- Add the mushrooms and the remainder of the oil to the pan. Stir. Cook for 1 minute.
- Add the quinoa to the pan. Stir to mix in the mushrooms. Cook for approximately 3 minutes until the mushrooms are done.
- Remove from heat. Stir in the green onions.

Notes: Other varieties of mushrooms can be substituted for oyster mushrooms.
