Ingredients
- 1 purple topped turnip medium sized
- 1 Tbsp fresh ginger
- 1/2 cup extra virgin olive oil
- 1/2 tsp Celtic sea salt
- 1 1/2 tsp turmeric
- 1 1/2 tsp garam masala
- 1 tsp ground cumin
- 6 oz tomato paste
- 1/2 cup water
- 1/4 tsp baking soda

Instructions
- Peel the turnip and ginger. Run the turnip and ginger through a food processor to make a chunky puree.
- Place the turnip puree, oil, salt, turmeric, garam masala, and cumin in a medium-sized pot. Cook on medium low for 25 minutes. Stir every 5 minutes.
- Stir tomato paste and water into the turnip mixture. Cook with a lid on the pot for 10 minutes, stirring after 5 minutes.
- Add the baking soda, and stir.

Notes:
Masala is traditionally made with onions. The baking soda is optional. It helps to reduce the acidity of dishes made with masala. Extra masala can be stored in the freezer.
