Peel the turnip and ginger. Run the turnip and ginger through a food processor to make a chunky puree.
Place the turnip puree, oil, salt, turmeric, garam masala, and cumin in a medium-sized pot. Cook on medium low for 25 minutes. Stir every 5 minutes.
Stir tomato paste and water into the turnip mixture. Cook with a lid on the pot for 10 minutes, stirring after 5 minutes.
Add the baking soda, and stir.
Masala is traditionally made with onions. The baking soda is optional. It helps to reduce the acidity of dishes made with masala. Extra masala can be stored in the freezer.
