Ingredients
- 4 cups water
- 1 cup green lentils
- 3/4 tsp Celtic sea salt
- 1/2 Tbsp extra light olive oil

Instructions
- Clean through the lentils. Wash lentils.
- Add water, lentils, and salt to a small pot. Bring to a boil, then reduce heat to medium-low. Cook for 20 – 25 minutes. Stir occasionally.
- Lentils should be soft but not smooshy. Drain. Keep lentils in a colander to continuing draining.
- Preheat the oven to 400F.
- When the oven is hot, transfer the lentils to 2 9x13 glass baking dishes. Add 1 ½ tsp oil per dish. Stir to coat the lentils.
- Bake 15 minutes. Stir. Bake an additional 15 minutes. Stir. Bake for an additional 5 minutes.
