Indian Spiced Eggplant
Cut the eggplant into 1 inch cubes. Place them in a large sauté pan with high sides.
Add 2 Tbsp oil, salt, and turmeric to the pan. Stir.
Heat over medium heat for 5 minutes.
Sprinkle the garam masala over the eggplant. Add the remaining oil. Stir.
