Ingredients
- 1 large eggplant
- 1/4 cup extra virgin olive oil
- 1/2 tsp Celtic salt
- 1/2 tsp turmeric
- 1/2 tsp garam masala

Instructions
- Cut the eggplant into 1 inch cubes. Place them in a large sauté pan with high sides.
- Add 2 Tbsp oil, salt, and turmeric to the pan. Stir.
- Heat over medium heat for 5 minutes.
- Sprinkle the garam masala over the eggplant. Add the remaining oil. Stir.
- Cook for 5 more minutes.

- Serve in sauted Swiss chard and corn bread
- Serve with choli, saag, and rice
